Protein Pancakes

One of my favorite weekend traditions is making protein pancakes. This is my favorite way to treat myself when I get a quiet morning and have time to make something other than eggs and toast 🙂

These pancakes are packed with protein, low in calories, easy to make, and of course – so delicious. You can flavor them however you want! I’ve made them with strawberries (as pictured), blueberries, and even with slices of banana cooked in.

Get creative and share your ideas!

Ingredients:

– 1/4 cup old-fashioned rolled oats
– 1/4 cup egg whites
– 1 tsp vanilla extract
– 1 scoop protein powder (I used 1 scoop Herbalife vanilla protein + 1 scoop Formula 1)
– A sprinkle of baking soda
– Hefty dose of cinnamon
– Add water until it can be easily poured

Instructions:

Blend all ingredients in a blender, then cook on med-low for about 5 minutes each side. Flip when bubbles appear. Topped with warmed frozen strawberries and even more cinnamon because #yolo 😎
